How can I test that payments are coming through to my Stripe account?

1) Create a donation item, register to the campaign as a participant (find the campaign link & QR code participants use to access your campaign in the top left corner of the campaign dashboard), make a donation, see the payment in the Checkout Console and login to Stripe to see it in the Stripe dashboard.
2) In the Bids and Buys section in the side menu search the transaction and click to refund it.
3) Hide or delete the donation item after the test if not required.
